Mohamed Hussein of the Al Halabi, Four Seasons, in Damascus is considered to be one of the best chefs in Syria, and that in a country where just about everyone considers themselves to be a good chef! These kebabs, made from a recipe he gave me, are best grilled outdoors, but they are also lovely cooked in a stovetop grill pan or simply broiled.
